The dormant season is a great time to do pruning of a lot of plants since you can see the branch structure better. Use this time to shape your plants and eliminate any crossing branches.
Even though it is cold outside, the winter winds can pull the moisture out of a lot of large leaf evergreens. Keep an eye on them and be prepared to water if they start looking a little stressed.
